Carboxymethyl cellulose or cellulose gum is a food additive to be used as a thickner. Add this to fondant for a firm texture that will allow the fondant to hold it's shape and dry quickly when exposed to outside air. Use sparingly and start with a little bit, mix through and allow the fondant to rest in a sealed container for a few hours before adding more. General rule of thumb is 2ml to 250g of fondant. Less is more if used correctly.
